Hyderabadi Baghare Baingan ... Must Try!!!!

This dish goes well with Biryani (veg or Non-Veg) as well as plain steamed rice or chapati.

Baghare Baingan
  • Eggplant- 500 gms,
  • Sesame seeds- 2 tbsps.,
  • Peanuts- 3 tbsps.,
  • Cumin powder- 1 tsp.,
  • Chopped onion- 1 Cup,
  • Dry Red chili whole- 2,
  • Tamarind- 30 gms.
  • Green chili- 4
  • Curry leaves- 10 nos.,
  • Fenugreek seeds- 1/2 tsp.,
  • Mustard seeds- 1 tsp.,
  • Turmeric powder- 1 tsp.,
  • Oil- for frying,
  • Salt- As per taste.
  • 1. Wash and slit the eggplants into quarters without removing the stem.
  • 2. Deep fry in medium hot oil till brown in colour.
  • 3. Lightly roast the peanuts and sesame seeds.
  • 4. Grind peanuts, sesame seeds and red chilies to a smooth paste. Slit green chilies and cut into one inch long pieces.
  • 5. Boil tamarind in 1 cup of water for 5 minutes and strain to get tamarind pulp.
  • 6. Heat oil in a thick bottomed pan.
  • 7. After that add mustard and fenugreek seeds, when mustard seeds start to splutter, add curry leaves and chopped onions. Cook till golden brown and add peanuts and sesame paste and stir constantly.
  • 8. Add turmeric powder, green chilies and cumin powder. Season with salt. Add 2 cups of water, bring it to boil and add tamarind pulp.
  • 9. Add fried eggplants and cook on Dum on a slow flame for 15 minutes.
  • Note: You can add fresh coconut also. In that case make a paste of grated fresh coconut with peanuts, sesame and red chilies.

To enhance more flavor add ---- 4 tea-spoon corriander powder + 2 tea-spoon Goda Masala + 2 tea-spoon dark brown sugar or jaggery.

In our local Desi restaurant this dish is sold with name " Gutti Vankaya " and it is very popular. Few days back I had made this dish for an American guest and to my surprise he loved it and packed leftover to his home. Later few times he attempted to cook it. I love this dish....

Besides, chicken biryani, this one is another my fav Andhra dish.
I like it less sour though.

Mere cousine ki wife bahot hi badhiyaa banaati hai. (she lived 25 yrs in Secundrabad)

Good dish.. Similar to how we make "Bhare Baingan" or "Bharli Vangi" but ingredients are a bit different.

one of my Telugu colleagues cooked this for potluck... but it had too much oil... deep frying is what scares me...

I'll try it a bit like baigan bharta... Cook baigan in Oven then carry on with rest of the recipe...

Amtha pai probably can post the recipe' of "Baigan Paleeta"... awesome Gujju dish similar to "Baigun Bhaja" of Bengalis...
