Thumbs up Typical Maharashtrian Diwali sweet - Besan Wadi/Barfi

Shama made this for Diwali and I managed to screw it up a bit towards the end.

I wanted to help her but despite her insistence that I stay out, I managed to screw it up a wee bit.

Anyway, Besan Laddo or barfi is very popular Maharashtrian sweet for Diwali

Ingredients
1) 2 to 2.5 parts Besan - Chickpea flour
2) 1 part milk -whole or 2% fat (do not use fat free milk)
3) 1 part Ghee - Clarified butter
4) Fine powedered Ilaychee (without the outer shell)
5) 1 part Sugar (more if you like it sweeter)

Steps
  • Take a big vessel and add ghee to it and heat it over high flame
  • Now add Sugar to water in a separate vessel and heat it on high flame till you get "Sakhar Paak" or "Chachni" as you call it in Hindi. Basically you are creating a thick "sugar sauce" which will be used later on.
  • Now add milk to the heated ghee and reduce flame
  • Immediately add Besan to this ghee and milk mixture
  • Stir properly over medium flame
  • This will initially become a paste and thick
  • Keep stirring and separating this paste till it starts forming granules and becomes powdery
  • This takes long but you need to be patient and perform these steps over medium flame or the Besan will burn
  • Keep at it till Besan becomes granular and light brown
  • After Besan is granular and fine enough, add the thick sugar sauce to the Besan and stor well to mix it in.
  • Add the ilaychee powder to it (just a bit) and stir well.
  • This will again create a thick and paste like mixture.
  • Now spread a think layer of ghee on a flat dish and pur this mixture onto the dish
  • Now use a rolling pin to make it uniformly flatten this spread.
  • Use a knife to cut into pieces and let is settle
  • After a few minutes you have Besan Wadi/Barfi!
  • If you can manage it then you can roll this paste into laddoos and have Besan Laddos instead.
  • Happy Diwali!

The part I screwed up was that I added too much ilaychi powder but it turned out great and just has an extra dash of ialychee to it
