Thumbs up Indian railway station vendor style potato puri bhaji

I remember travelling by train in India and eating the poori bhaji sold by vendors on train stations. That bhaji - made of potatoes - has a special taste to it.

Well I tried to recreate the taste and it worked out pretty well. I just made the bhaji and not the pooris. I think you all know how to make pooris

Ingredients:
  • 4 potatoes. Not the baking kind which crumble immediately on cooking.
  • Curry leaves
  • Half inch piece of fresh and peeled ginger, cut up into small pieces
  • Mustard seeds
  • Green chillies
  • Coriander seeds
  • Turmeric powder
  • Oil to cook
  • Salt to taste

Recipe:
  • Peel the potatoes
  • Cut into small and sort of thin pieces. Too thick and they wont cook well quickly.
  • Put them in a microwave safe bowl, add water to cover them all and microwave them for 3 to 4 minutes. This will soften them up.
  • Remove from microwave, drain water and keep aside
  • Heat oil in a pan or utensil with a lid. Lid is necessary to cook this recipe.
  • When oil heats up, put in the mustard seeds so that they crackle
  • Add the green chillies and let them sizzle too
  • Reduce the flame and then within a minute add the coriander seeds
  • Add the curry leaves
  • Add the ginger
  • Add two generous pinches of turmeric powder
  • Dump the potatoes in the utensil now and stir well.
  • Increase the flame
  • Cover the utensil with the lid
  • Within 2 minutes open lid and stir well.
  • This time take a fistful of water, as if you are about to gargle, but sprinkle it on the potatoes.
  • Stir well, cover with lid.
  • The lid will allow for steam to build up and cook the potatoes.
  • However, keep stirring every 2 minutes and then covering up.
  • While stirring you could press and crush a few pieces of potato.
  • Within 15 minutes maximum, you will have that railway station type bhaji. Now go figure out making puris

his puri bhaji tastes good coz of his mehenat ka paseena in it..you recipe might not work out that way..until you put your own mehenat ka paseena in it..especially when there are no fans/ac around while your mixing the taters with rest of the ingredients

Nah... they say add 2 milligrams of water... but htf do you measure 2 milligrams at home

mg or ml?? ask someone from ur family or neighbour if he/she uses an insulin syringe for diabetes....thats shud help u!!

what i learnt in pathshaala ,it suggests density if water is 1 so 1mg =1ml...

Oh, I love the poori bhaaji that they make at stalls; thats lovely man.
Sigh; miss that kind of food. I love to eat the potato bhaaji by itself hehe, never mind the poori.
