The Ultimate French Fry

3 pounds baking potatoes (about 8 potatoes) (1.5 kg)
Vegetable oil for deep-frying
Salt

Scrub potatoes to remove all dirt. With paring knife, cut out any eyes or dark spots. Keeping peel intact and using sharp chef’s knife or mandolin, slice potatoes lengthwise into 1/4-inch (5 mm) thick slices. Stacking 2 or 3 slices at a time; julienne into 1/4–inch (5 mm) thick strips. Transfer to deep bowl.

Cover with water; let stand at room temperature for at least 1 hour or up to 24 hours.

Drain potatoes; dry well. In deep-fryer, wok or deep pot, pour enough oil to come at least two-thirds up side; heat to 300ºF (150ºC). Deep-fry potatoes, in batches until tender but not golden, about 5 minutes. Using Chinese skimmer or slotted spoon, transfer to paper towel-lined rack. Let oil cool.

(Make-ahead: Let stand at room temperature for 1 hour or for up to 2 hours)

Heat oil to 375ºF (190º). In batches, refry potatoes for 3 to 5 minutes or until crisp and golden. Immediately transfer french fries to clean paper towel-lined racks.

Season with salt to taste.

Yield: 4 to 6 servings

AIOLI FOR FRENCH FRIES:
1 jalapeno pepper
1 tablespoon chopped chives (15 ml)
1/4 cup mayonnaise (50 mL)

On baking sheet, broil jalapeno pepper, turning occasionally for 7 to 10 minutes or until blackened; let cool slightly. Remove skin and seed; chop finely. Stir into mayonnaise; add chives.

Sprinkle some lemon juice (nimbu) . salt and red crushed pepper(Laal mirchi powder ) on top. Taste yummy.

Actually boiling an egg correctly is an art and i am not kidding. You need the right temperature and even 10 seconds here and there makes a difference.

very true.. also, perfectly boiled eggs peel easily yet they don't have the purplish/dark gray tinge that indicates the yolk and egg white have reacted.

I am hunting for the most authentic recipe for tap water.

Even farting is an art .You need the right expelling pressure. One psi less or more can make all the difference with the sound smell and feel good factor.

Very true...Also a perfectly pressured fart comes out easily yet it doesnt have that brown yellow chocolate tinge that indicates that the fart and faeces have reacted.
