Left over rice and curry? A nice tasty snack

Take the rice (2 cups), mix about half cup besan (or corn flour) add the curry and mix well.. Add water and mix well. You can smash the rice or use sticky rice too.. Now add about half spoon of salt, red chilli powder, finely chopped onions (boiled potatoes if you have but not required).. a teaspoon of chat masala or jal jeera powder, a teaspoon of ketchup (optional finely chopped fresh coconut) one small cube of butter and mix to a consistant paste (the paste should be ballable.. not runny).

Now make balls the size of ping pong balls and keep them on a buttered plate (or else they will stick)..

Heat oil in a pan and deep fry these on medium turning them gently with a spatula. When golden brown, take them out on a kitchen tissue paper. Serve medium hot (very hot will burn your upper pallete).. so be careful.. and with tea/ketchup/green or tamarind chutney...

Children love it.

You can add carrots, capsicum, spinach or any other veggis to this and vary the flavor.

It is a very delicate dish so be careful handling it.

Just like arancini. Add a small cube of cheese in between for that little extra flair

Re: Left over rice and curry? A nice tasty snack

Yup inbetween pataa nahi.. it might melt while deep frying and such.. kabhi kiyaa nahi so dunno.

But scrapping cheese over the prepared dish while it is still hot might be interesting. Sad part, the melting kind of cheeze is not easily available (and not part of the indian larder you see).. yaa umrikaa mein I will certainly try (provided my son leaves enough to get that treatement.. he just gobbles up cheeze like there is no tomorrow but still is as thin as a matchstick.. Genetics I say!! damn those watson and crik who discovered the troublesome DNA in the first place. )

Re: Left over rice and curry? A nice tasty snack

grand ma used to mix some spices in rice and used to dry them off in the sun for a few days, then deep fry them as vathal (like papad). Used to love them. Its been ages since I had homemade rice vathal.

Re: Left over rice and curry? A nice tasty snack

Well yaa but that "rice" is different.. I mean it is not the cook and eat variety.. these are not sticky enough I rekon.. My mom used to do that thingy with sabudana now it is all buy it off the shelf ones.. fryums and such..

Vattal or vaadaams are favorites of mine too.. but alas they are perhaps extinct except in TN and AP and that too traditional homes.. next generation I guess will look it up on internet if at all.
