Lightbulb Namak-para - the namkeen snack

Namak-para is the name

Ingredients

Maida (white flour) – 1 cup
Oil – for frying
Shortening – 3 table spoon
Salt – ½ teaspoon
Ajwain – ¼ teaspoon

Preparation:

Mix ajwain, salt, white flour and shortening well without any water, the flour should be all heavy with the shortening, add oil if needed but flour shouldn’t be sticking to your hands after you mix it. Then start mixing water few drops at a time to knead the flour to very tight consistency until you can bind the whole flour together.

Leave it covered with damp cloth for about half an hour.

Make small balls and flatten it like a roti but thickness should ¼ of roti, (not the gujju roti though, may be half in that case) after putting a few drops of oil on the rolling pin. Cut the roti with sharp knife in diamond shape <>

Heat the oil to high and put the pieces while stirring them so they won’t stick to the bottom of the pan. Fry them until they start turning to golden color.

Take them out on a paper towel. Let them cool off and store in airtight container for freshness. Perfect snack for the Diwali season.

as I mentioned in Rakhi ji's thread I made matthi as well with the same small quantity rolled dough and frying untill crispy golden brown.

best with masala of aam ya nimbu ka achaar. :slurp:

any simple sweet for the season guys ...

this has always been my fav snack item back in india.... sounds deceptively easy to make, but i guess the tough part is handling all that hot oil and smoking up the aptmt.
