Behind the Taj Mahal Hotel in Bombay, is a landmark for all the 'foodies'
Bade Mian!:D Actually the original Bade Mian died a long time ago but his sons continue the tradition.
One of his 'world famous' dishes was Baida Roti. With kheema!
Does anyone know how to make this???:D :smash: ;)

I used to make it like a parata only stuffing was changed to chicken/mutton/keema and egg.. Used to come out good but I dunno if that is original cos I never ate it in bombay..
By the way.. I used to get the keema from a restaurant near my home.. yummy. (I later learned the recipe for that too but I have to search it in my diary..).. and eggs are simple..boiled and mashed.. ek dum simple yaar..
Here it goes.. Bechari meri biwi ko dictate karna padaa kyon ke mai bhool gayaa kaise banaa hai.. (jab se shaadi hui hai ghar me vegeterian hone ka naatak jo kartaa hoon.. :D )
Keema
peanut oil (you chose your oil.. I like peanut oil)
2 medium onions chopped (as fine as you can without chopping your hands/fingers off)
1 medium tomato chopped
ginger/garlic paste (bottle me miltaa hai indian stores me.. vohi the one you put in biryaanis)
4 really really really hot green chillis (cut finely)
half kg/1 lb ground lamb (or chicken and if you chopped your fingers while cutting oninons.. why waste it.. add that also after grinding it nicely)
1/2 teaspoon turmeric
2 ts garam masala (I skip this one.. spoils the fun of green chilli but hey you might like it)
2 teaspoons lemon juice (and one half cut lemon for later use)
2 table spoon parsley -- chopped
coriender leaves, curry leaves (a little nicely chopped)
Vidhi
Heat the oil in a skillet and add the onions and curry leaves. Cook, stirring until onions are browned. (go apply dettol to your wounds.. missing fingers etc.. if required call 911) Add the garlic ginger paste and chilies and cook 2 minutes. Add tomatos and stirr another minute. Add the ground meat and cook, stirring to break up any lumps. Cook until the meat begins to brown. Sprinkle with turmeric and salt, garam masala and stir. Add the water, cover, and cook over low/medium heat about 20 minutes, stir often. When ready, most of the liquid should be absorbed. If it is not, uncover and cook until it is evaporated. Add lemon juice mix well, and coriander leaves.
Cut onions into slices (rings), couple of green mirchis.. add pepper salt and lemon juice. Use as a salad.
Now eat this keema with rotis.. or make baida rotis with this.. your choice.

Which bombayite can forget Bade Mia, then also the other guy near Strand "Hiroo Kababwalla" and there was one more joint behind Regal....forget the name.
I dont know how many people out here have done this, but during ID, we used to go to Khaugalli at Mohamed Ali Road, and the food that you get there during Ramzan is amazing.

By the way videshee bhai.. I do not claim to make keema good, or for that matter even savai ki kheer. I think no one can make it better than the muslim folks.. (No this is not a hindu muslim discussion.. just an observation.. I have eaten it in both households and prefer the ones made at my muslim friends)

Ur right GpeL ji, savai ki kheer ,aaj bhi man hota hai meethi ID par india jaun or vo savai-----------munh mein paani aa gaya,kya aap log bhi kaisi baaten karet hain...........

videsee bhaijaan waise yeh terminology...mumbaiyya musalmaan kee hee hai....baida and kheema..In the north we call it keema..and rumali roti....
jama masjid ke ass pass in delhi......kareem.....wah!!
also in lokhandwwalaa one lebanese joint particularly good..
the difference between here and India is that we get clean properly minced keema..as compared to..machine cut here...

The best baida roti I have ever eaten was at Bade Miya's which is a road side stall behind the Taj mahal hotel in Mumbai.
The mutton and chicken biryani and the kheema and offcourse baida roti that you get there is simply heavenly. It even beat the mutton biryani from Delhi Darbar in Grant Road, Mumbai.
I used to go there regualrly and the old 'Bade Miya' was a good friend. He passed away, but the traditional cooking and recipes and quality have not changed :up:
I will make it a point to go again once I make a trip to India next year. Sorry dont know the recipe.
Just go to Taj Mahal hotel in the evening...
- First thoda hawa khao at Gateway of India... ;)
- Then have a few beers at Cafe Mondegar or Leopold Cafe ;) Enjoy the jukebox there which now has CD's instead of LP's, but its fun.
- Finally head for Bade Miya.. :up:
Its all within 5 minutes walking distance!!

Folks.. yesterday I made keema and used soy been thingy instead of meat for keema. It came out very good and I could not tell the difference.. now you may ask why used pretend meat instead of actual meat.. well my wifey is a vege and so cooking meat is prohibited at homey.. thats why..

You know I took two fist fulls and put it in a bit of water (to let it get soft) and thats it it was fine.. (about 1 Cup I would say)..
The darn thing is a bit heavy to digest though.. even meat digests faster than soy.. I was feeling full even during dinner time.

Neither am I but I loved it yesterday and to give me a certificate of excellence.. my daughter who is usually very very impossible to feed ate the stuff without any fuss and she was asking for more much to the surprise of my wife.

Now that surre is encouraging!
All my son likes to eat nowadays is samosa with imli chutney and dinosaur shaped chicken nuggets!
Now I have more than enough reason to try this out!:D

If he is not used to chilli.. just put salt and pepper instead of chilli.. tastes mild and good.
